In 2014 Jimmie the youngest of the Lay Family ‘boys’ joined the business. He trained as a chef at Michelin stared Northcote Manor before working for several gastro pubs in the area. He is passionate about good quality wholesome food. Jimmie got to work on establishing a café at Lay of the Land, opening in Spring 2015. Noticing rapidly growing independent coffee scene, he decided that we needed to make sure our coffee was top notch, he immersed himself in coffee culture and got to know our coffee suppliers Casa Espresso, who trained Jimmie and subsequently the rest of our café staff to pour top notch coffee. Jimmie hasn’t forgotten his culinary training and now produces an ever-changing menu of light lunches and snacks to delight the most demanding of foodies. Like our coffee Jimmie works closely with a number of local suppliers to source the best quality local produce.
